When deciding on a dressing for a salad, I’ll sometimes opt for a simple drizzle of oil and vinegar, but other times the additional flavor punch in a homemade dressing can take a salad from good to great. Homemade salad dressings can be sweet, tart or spicy - but always flavorful.
This Peach Punch Dressing uses Tampico peach punch, a juice the family enjoys to drink. Knowing the flavor is enjoyed, I decided to use it in a homemade salad dressing. I used it as the sweetness to a dressing. This homemade dressing works especially well with a spinach salad since the nuttiness of the spinach greens mixed with the sweetness of the dressing can make every bite irresistible and savory.
I make one or two batches of the Peach Punch Dressing and keep it the refrigerator for a week or so.
Peach Punch Dressing
Ingredients for a small serving. I tripled to have sufficient for the week.
2 tablespoons Balsamic vinegar
1/2 cup Tampico Peach Punch
1 tablespoon of Dijon mustard
Fresh cracked black pepper
Whisk all ingredients in bowl. Be sure to dissolve the mustard as well as possible. Carefully transfer to a salad dressing container or other container with a tight fitting lid. Shake up the dressing before serving.
1 Bag of Organic Spinach
5 Slices of crumbled bacon or 1/2 jar of real bacon bits
1/2 cup of blueberries
1/2 red onion, sliced or chopped
Peach Punch Dressing, as much as you need to properly dress.
Mix all ingredients in a large salad bowl. Serve immediately.
Look to other sweet Tampico juices to use in this dressing. Substitute the Peach Punch with another juice and see how you enjoy it!
